Chicken rolls: a simple and quick dish but rich in flavour!

  1. Prepare the Chicken:
    • Preheat the oven to 180°C (350°F).
    • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken breasts to an even thickness, about 1/2 inch thick.
    • Season both sides of the chicken breasts with salt and pepper.
  2. Assemble the Rolls:
    • Lay out the chicken breasts on a flat surface.
    • Place 2 slices of prosciutto or ham on each chicken breast.
    • Add 2 slices of cheese on top of the prosciutto or ham.
    • If using spinach leaves, place a few leaves on top of the cheese.
  3. Roll and Secure:
    • Starting from one end, tightly roll up each chicken breast, tucking in the sides as you go.
    • Secure the rolls with toothpicks or kitchen twine to hold them together during cooking.
  4. Sear the Rolls:
    • Heat the olive oil in an oven-safe skillet over medium-high heat.
    • Add the chicken rolls to the skillet and sear them on all sides until golden brown, about 2-3 minutes per side.
  5. Bake the Rolls:
    • Pour the white wine or chicken broth into the skillet.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
    • If using Parmesan cheese, sprinkle it over the chicken rolls during the last 5 minutes of baking.
  6. Serve:
    • Remove the chicken rolls from the oven and let them rest for a few minutes.
    • Remove the toothpicks or kitchen twine.
    • Slice the chicken rolls into rounds and arrange them on a serving platter.
    • Garnish with fresh herbs and serve immediately.

Tips:

  • Stuffing Variations: You can customize the filling with other ingredients like sun-dried tomatoes, roasted red peppers, or sautéed mushrooms for added flavor.
  • Sauce: Serve the chicken rolls with a light sauce made from the pan drippings, wine, and a touch of cream or butter for extra richness.
  • Side Dishes: Pair these chicken rolls with a fresh salad, steamed vegetables, or a side of pasta for a complete meal.

These chicken rolls are perfect for a quick weeknight dinner or a special occasion, offering a delightful combination of flavors and textures. Enjoy!
