Chocolate Peanut Butter Bars
- Prepare the Base Layer:
- Mix the crushed digestive biscuits, melted butter, cocoa powder, powdered sugar, and peanut butter in a large bowl until well combined.
- Press the mixture into the bottom of a lined 20×20 cm (8×8 inch) baking pan. Use a spoon or the bottom of a glass to smooth the surface. Refrigerate while preparing the middle layer.
- Prepare the Middle Layer:
- In a clean bowl, mix the creamy peanut butter and powdered sugar until smooth.
- Spread the peanut butter mixture evenly over the chilled base layer. Use a spatula to smooth the surface. Refrigerate again while preparing the top layer.
- Prepare the Top Layer:
- Melt the chopped dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring occasionally until smooth.
- Pour the melted chocolate mixture over the peanut butter layer and spread evenly using a spatula.
- Chill and Serve:
- Refrigerate the assembled layers for at least 2 hours, or until the chocolate is fully set.
- Once set, remove from the refrigerator and let sit at room temperature for about 10 minutes before cutting into bars.
- Serve:
- Cut into rectangular bars and serve. Store any leftovers in an airtight container in the refrigerator.
