Chocolate Peanut Butter Bars

  1. Prepare the Base Layer:
    • Mix the crushed digestive biscuits, melted butter, cocoa powder, powdered sugar, and peanut butter in a large bowl until well combined.
    • Press the mixture into the bottom of a lined 20×20 cm (8×8 inch) baking pan. Use a spoon or the bottom of a glass to smooth the surface. Refrigerate while preparing the middle layer.

    • In a clean bowl, mix the creamy peanut butter and powdered sugar until smooth.

    • Melt the chopped dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring occasionally until smooth.

  4. Chill and Serve:
    • Refrigerate the assembled layers for at least 2 hours, or until the chocolate is fully set.
    • Once set, remove from the refrigerator and let sit at room temperature for about 10 minutes before cutting into bars.

    • Cut into rectangular bars and serve. Store any leftovers in an airtight container in the refrigerator.
