In a saucepan, combine almond milk, sugar, and cornstarch. Heat over medium heat.
Split the vanilla bean in half, scrape out the seeds and add them to the mixture.
Stir constantly until mixture thickens (about 5 minutes).
Remove from heat and let cool for a few minutes.
Pour the mixture into glasses and let cool completely.
Refrigerate for at least 1 hour.
Garnish with orange zest and fresh fruit before serving.
Tip: For an even silkier texture, pass the mixture through a fine strainer before pouring it into the glasses.
