INSTRUCTIONS:
Place a slice of white American bread on one side of the bread and a slice of yellow American bread on the opposite slice. Cover each side with a thin piece of honey ham. Prepare the sandwiches so that when you remove the eggs from the pan you are ready to go.
Cook an egg over easy for sandwich. Sprinkle with a little kosher salt and freshly ground black pepper. Remove from pan without overcooking and gently add one to each American white side. Add a pinch of salt and pepper. Bring both sides of the sandwich together. Don’t press or you will break the yolk.
Heat the pan over medium-low heat. Brush each sandwich with melted butter. Place the butter side down in the pan. Brush the top with melted butter. Cover lightly with aluminum foil. Cook until the bottom is golden. Flip and cook until the other side is golden brown and the cheese is gooey and melted.
