Fluffy Apple Cream Cake
Preheat the oven: Set your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
Prepare the cake batter:
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large bowl, cream the butter and sugar together until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Add the dry ingredients to the wet ingredients alternately with the sour cream, mixing just until combined.
Add the apples:
Gently fold in the sliced apples into the batter.
Pour the batter into the prepared cake pan and smooth the top.
Bake the cake:
Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
Prepare the cream filling:
In a cold mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Assemble the cake:
Once the cake has cooled, slice it horizontally into two layers.
Spread the whipped cream on the bottom layer, then place the second layer on top.
Optionally, dust the top with powdered sugar or add a drizzle of caramel sauce.
Serve:
Chill the cake for at least 30 minutes before serving to allow the flavors to meld.
This fluffy apple cream cake is perfect for any occasion and is best enjoyed with a cup of tea or coffee.
