2 eggs
80 gr. Tapioca flour (you can substitute it with common cornstarch)
50 gr. of cream cheese
35 gr. Parmesan cheese
1/4 tsp. of baking powder.
30 grams. of Mozzarella Butter
for the filling (the amount is to taste)
Salt to taste
Preparation
1- To start we add the eggs, the tapioca flour (or whatever you have), the cream cheese and the parmesan. Mix all these ingredients well until you obtain a smooth paste and let it rest for 15 minutes.
2- Meanwhile, place a frying pan over medium heat and add the butter and let it melt well. We must make sure that he greases the entire surface of the pan before cooking.
3- Once hot, pour the semi-liquid mixture into the pan and let it brown for about 3-5 minutes. Then we turn it over and quickly add the mozzarella on top. We wait for the bottom to brown and the cheese to melt.
And voila, it is very easy to prepare this delight in just 5 minutes. As we mentioned before, you can add whatever you want to the preparation. One tip is to add a little pepper and you will notice that the flavor changes a lot.
The tapioca flour in this recipe is key, as it gives it an incredible texture and flavor. If you can’t get it, you can use any type of cornstarch that you can find in the market or in a store near your home.
