Ingredients:
1 lb. ground chicken
1/2 cup breadcrumbs
1/4 cup grated onion
2 cloves garlic, chopped
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
1 teaspoon chopped dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg
Olive oil, for cooking
For the Tzatziki sauce:
1 cup Greek yogurt
1/ 2 cucumber, grated and squeezed to remove excess moisture
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
Salt and pepper to taste
Instructions:
Preheat your oven to 400 °F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine ground chicken, breadcrumbs, grated onion, minced garlic, chopped parsley, chopped mint, dried oregano, ground cumin, salt, black pepper and egg . Mix until well combined.
Shape the mixture into small meatballs about 1 inch in diameter and place them on the prepared baking sheet.
Drizzle the meatballs with olive oil and bake in the preheated oven for 15 to 20 minutes, or until cooked through and lightly browned.
While the meatballs are cooking, prepare the tzatziki sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt and pepper. Mix until well combined.
Serve the Greek chicken meatballs hot with the tzatziki sauce on the side for dipping.
