Add the dissolved yeast and oil to the flour mixture. Mix with a spoon until you get a sticky dough.
Cover the bowl with cling film and let the dough rest in a warm place for at least 2 hours, or until the dough has doubled in volume.
Sauce and pastry:
In a pan, sauté the onion and garlic until golden brown.
Add the tomato sauce, basil, oregano, salt and bay leaves. Cook over low heat for 15-20 minutes.
Preheat the oven to 220°C.
On a baking tray, roll out the dough with greased hands until you obtain the desired thickness.
Add tomato sauce, cheese and your favorite ingredients.
Bake for 15-20 minutes or until the pastry is golden and crispy.
