Preparation
- In a large bowl, combine the potatoes, carrots, peas, cucumber and scallions.
- In a small bowl, combine mayonnaise, Greek yogurt, Dijon mustard, cider vinegar, salt, and pepper.
- Add the salad dressing and mix well.
