Preheat your oven to 200°C (400°F).
Season the pork chops with salt and black pepper on both sides.

Heat the vegetable oil in a skillet over medium-high heat. Sear the pork chops for 2 to 3 minutes on each side until golden brown. Transfer them to a baking dish and bake in the preheated oven for about 20-25 minutes or until cooked through.
Meanwhile, prepare the potatoes. In a saucepan, combine the diced potatoes, salt, black pepper, chopped parsley, grated Parmesan, garlic powder, onion powder, and olive oil. Pour water and bring to a boil. Reduce heat and simmer until potatoes are tender and liquid has reduced, about 15 to 20 minutes.
While the potatoes are cooking, prepare the lemon-parsley sauce by combining the lemon juice, salt and black pepper in a small bowl. Mix well and let stand.
Once the pork chops are cooked, remove them from the oven and let them rest for a few minutes.
Serve the pork chops with the cooked potatoes and drizzle with the lemon-parsley sauce.
