Now that you have all the ingredients ready, carefully follow these steps to prepare your sugar-free and gluten-free cake:
1. Beat the eggs
Start by beating the eggs in a bowl until foamy. Add the sweetener and continue mixing until the mixture is smooth.
2. Add the other liquid ingredients.
After obtaining a smooth mixture of eggs and sweetener, we add the lactose-free milk (or vegetable milk) and the sunflower seed oil. Also add vanilla essence to give a touch of aroma to the cake. Mix all the liquid ingredients well.
3. Add the dry ingredients
Gradually add the previously sifted rice flour, cornstarch and baking powder. Continue to mix gently until the mixture is smooth and lump-free.
4. Pour the mixture into the mold.
Prepare a greased cake pan and lightly flour it. Pour the mixture into the mold, making sure it is evenly distributed.
5. Bake
Preheat the oven to 180°C and bake the cake. Cook for about 30 minutes or until a toothpick inserted inside comes out clean. Baking time may vary slightly depending on your oven, so check the cake periodically.
6. Let cool and unmold.
Once cooked, let the cake cool in the mold for a few minutes. Then, carefully unmold the cake and transfer it to a serving plate. Let it cool completely before cutting and enjoying.
